  • 4 cloves garlic, minced
  • 1 tsp cumin

  • 1 can (28 oz) crushed tomatoes
  • 6 large eggs
  • 1/2 cup crumbled feta cheese
  • Fresh parsley and cilantro
  • Crusty bread for serving

👨‍🍳 Instructions:

  1. Heat olive oil in large skillet over medium heat
  2. Sauté onion and bell peppers until soft, 8 minutes
  3. Add garlic, cumin, paprika, cayenne, cook 1 minute
  4. Pour in crushed tomatoes, season with salt and pepper
  5. Simmer 10-15 minutes until sauce thickens
  6. Make 6 wells in sauce with back of spoon
  7. Crack an egg into each well
  8. Cover and cook until eggs are set but yolks runny, 8-10 minutes

  10. Serve directly from pan with crusty bread
